Why Bio-Dynamic is even better than organic
Bio-dynamic farming is a deeper form of organic farming that works on the fundamental principle that the farm is a living organism. It’s all about balancing the ecological inter- relationship of soil, plants and animals as a self-nourishing system without external inputs.
Bio-dynamic farming adheres to guidelines that are even more stringent than those required for organic certification. All artificial chemicals are excluded.
Other methods unique to the biodynamic approach include:
- the use of fermented herbal and natural mineral preparations as soil additive sprays

RAINFED RICE is grown and milled on the family-owned Slater Farm in Northern Rivers, NSW.
Brett Slater, a local bio-dynamic certified farmer with a passion for innovative sustainable farming moved to organic farming practices in 1998 and converted to bio-dynamic growing in 2004. Brett grew his first crop of dryland rice in 2009. He then purchased and set up his own mill on the farm to produce an all-down-the line bio-dynamic grain.
Rice Nutrition
Brown rice retains its bran and as such has a higher nutritional value than most other rice. It also retains the Vitamin B that other rice lacks.
Brown Rice contains:
- 70% available protein (not complete protein unless combined with a legume, nuts or seeds)
- High levels of: manganese, phosphorus, selenium, magnesium, vitamins B1, B2, B3, B5, B6, zinc, iron, potassium, calcium and fiber
- No gluten
According to Traditional Chinese Medicine, rice:
- Has a neutral thermal nature
- Strengthens the spleen and pancreas
- Soothes the stomach
- Increases chi energy

GROWING a water-intensive crop like rice in drought-stricken regions just doesn’t make sense to Casino farmer Brett Slater, which is why he’s growing and milling his own. Mr Slater’s $500,000 mill, the first in the Northern Rivers, whirred into action this month, producing 300 tonnes of biodynamic medium-grain brown rice.

How to Cook Our RAINFED RICE

Absorption Method
- Add 1 cup of rice to a saucepan. Add 1 1/2 cups of cold water
- Bring to the boil, stirring occassionally
- Reduce heat and simmer covered for 25 to 30 minutes
- Remove from heat and stand for 5-10 minutes
Boil & Steam Method
- Place 1 cup of rice in a pot and cover with 3 cups of cold water
- Bring water to the boil, then turn to low
- Cover and cook for 35 minutes
- Drain and serve
Egg Fried Brown Rice
Ingredients:
2 eggs
2 teaspoons olive oil
1 chopped onion
2 crushed garlic cloves
1 finely chopped red chilli
1 large head chopped broccoli (small pieces)
1 large thinly sliced carrot
150g roughly chopped green beans
2 cups biodynamic brown RAINFED RICE
2 tablespoons tamari
To cook:
1. Cook the RAINFED RICE as per cooking instructions and leave to cool in the refrigerator.
2. Add salt & pepper to the eggs and beat until smooth. Heat a wok over medium-high heat until hot. Add 1 teaspoon of
oil. Add eggs and swirl around wok to form a thin omelette. Cook for 1 minute. Turn and cook a further minute. Remove
to a board. Thinly slice.
3. Add remaining oil, onion, garlic and chilli to wok. Stir-fry for 2 minutes. Increase heat to high. Add broccoli, carrot and
beans. Stir-fry for 4 minutes, or until tender and crisp.
4. Add rice and tamari to wok. Stir-fry for 3 minutes, or until heated through. Add egg and stir to combine. Serve
immediately.
Serves 4
RAINFED RICE and Macadamia Salad
Ingredients:
1 1/2 cups RAINFED RICE
1/2 cup macadamia nuts
2 tablespoons pepitas
200g cherry tomatoes, halved
2 thinly sliced red onions
3 thinly sliced celery stalks
1 small red capsicum, sliced
1 large sweet apple cubed
1/2 cup natural yoghurt
1/2 cup mango chutney
1 tablespoon lemon juice
To prepare:
1. Cook the RAINFED RICE as per cooking instructions and leave to cool.
2. Chop and toast macadamia nuts in a hot pan with pepitas until golden
3. Prepare tomatoes, onions, celery, capsicum and apple and combine in a bowl with the cooled rice.
4. Combine yoghurt, chutney and lemon juice in a bowl and season with salt and pepper.
5. Spoon yoghurt mixture over rice mixture. Toss to combine.
Serves 4

Vegetable & Red Lentil Stew
Ingredients:
2 cups RAINFED RICE
3/4 cup of red lentils
1 large onion chopped
2/3 cloves of garlic chopped
1 finely chopped red chillli, seeds removed
2 carrots
1 parnsip
1 sweet potato in chunks
To cook:
1. Chop onion, garlic and chilli and toss in heated pan with olive oil or ghee.
2. Add red lentils and gently toss for half minute.
3. Add all vegetables except for tomatoes and coriander and then cover with enough hot vegetable stock to cover all of the
food.
4. Simmer lentils and vegetables for 30 mins. (After about 15 mins, put the RAINFED RICE on to cook as per cooking
instructions)
5. After 30 mins add tomatoes, tomato puree and coriander to lentil/vegetable mix. Season with salt and pepper. Simmer
for an additional 10-15 mins.
6. Serve over brown rice
Serves 4
